My beautiful friend Lauren just opened the cutest boutique in McKinney, Texas called Landry Kate. She’s still working on getting the website up but you can shop her Instagram in the meantime!  I got this dress and that adorable leopard romper from her store.  When I saw this dress I immediately ordered it!  I love it with these statement boots, but I’m also looking forward to wearing it with a pair of heeled cowboy boots.

This dress is a great transition piece for fall, and the bows give it a cute pop. It’s only $19 and it comes in three colors. I’m excited about all the ways I’m going to layer it this season – I actually had styled it with some short black booties AND with a strappy pair of heels.  Both were cute, but I couldn’t resist showing off these gorgeous new OTK boots. I snagged them during the Nordstrom sale, but they are super luxe and well worth the full price! If I had to pick just a few key pieces to add to your fall wardrobe, a great camel dress and gray boots would definitely be on the list.

8 Carb Spaghetti


The worst thing about watching your carbs is not being able to eat pasta. I’m basically in love with pasta, so I’ve tried every “pasta substitute” imaginable… And sorry eggplant, but you’re just no substitute for noodles!

After years of searching/experimenting, I’ve finally perfected the most amazing low carb spaghetti ever. This dish has about 8 grams of carbs, and it’s seriously a life-changer for me! Here’s the recipe (which you can modify as long as you’re reading nutrition labels and counting those carbs).  This is one serving for me, but it’s pretty big and very satisfying.

Here is my la-bor-a-tory!!


 Ingredients (full fat versions of cheese and dairy!)

  1. ¼ lb lean ground beef
  2. ¼ cup pizza sauce (this is important – get PIZZA sauce and read the label. It should have about 4 grams of carbs. If you buy PASTA sauce, it will be extremely high in carbs. The taste is nearly identical but manufacturers put way less sugar in the pizza sauce)
  3. 1 oz Cream Cheese
  4. 2 Tbs Ricotta Cheese
  5. 2 Tbs Sour Cream
  6. One 7oz package of Shirataki Noodles (depending on where you live you may have to order these on Amazon – I get them at Sprouts Farmer’s Market)
  7. Shredded Cheddar cheese (enough to top the spaghetti, about ¼ C or less
  8. Salt and Pepper to taste

Meat Sauce

  1. Brown ¼ lb of lean ground beef and drain the grease
  2. Add ¼ cup of pizza sauce to saucepan with the beef and let it warm up
  3. Salt and pepper to taste

Cheese Mixture

  1. In separate bowl, mix room temperature cream cheese with ricotta cheese and sour cream
  2. Salt and pepper to taste


  1. Drain noodle package (this will smell bad!)
  2. Rinse noodles in a colander then drop into a pot of boiling water for 2 minutes
  3. Drain water and put noodles into a dry hot skillet to remove excess water (get them dry or you’ll have a little run-off like in my photo! Sorry but I was too hungry to wait!!)

Now it all comes together:

  1. Put half the noodles in an oven safe dish
  2. Layer half the cheese mixture on top
  3. Layer half the meat sauce on top of that
  4. Repeat!
  5. Top with shredded cheddar cheese and place in oven at 350 until the cheese is melted

I didn’t have the right sized dish for this single serving so I just used a regular pie dish.  Looks yum right?!?


Ok dolls, time to enjoy!  I like to mix it all up.  Consider your low-carb excuses invalid!

My Current Fitness Routine

I’m so overwhelmed with all the love and support on Instagram – so upon y’all’s request, I’m sharing my current diet and exercise routine. It’s REALLY simple and flexible.  I’m going to give you the guidelines and not an actual menu as I am not a doctor or a dietician.  Definitely consult one if you have ANY health issues.

I have always struggled with my weight, and dieting is just an everyday part of my life since I can remember. Literally like since childhood! As I have aged (I’m 33 y’all, the cellulite is for real!) I have found that my body responds the most to ketogenic cycling.  I’m not gonna get all technical on you, you can all go to google I hope… but basically the concept is to cycle low carb and normal carb periods.

What is currently working for me is low carb days every week day and a high carb weekend. It’s really more of a scheduling/fun issue.  Sorry, but this girl wants dinner with the bf!  You can choose any cycle you like or find works for your body and schedule.  Back when I was training girls, I recommended 3 low carb days, then 1 high carb day, then repeat.  It’s seriously that simple… No food is banned if it fits the carb requirement for that day.  I use Calorie King because some foods are sneaky!

Sample Low Carb Day

~I wake up, drink a huge glass of water with half a fresh lemon squeezed in it and then take my pup on a walk on an empty stomach

~I have a protein shake for breakfast once I’m cooled down and hungry (my fave recipe is below)

~I eat whenever I’m hungry throughout the day but my TOTAL carb intake for the day cannot exceed 20 grams. This is low y’all, like you gotta count them.  However, there are so many low and no carb foods that are delicious – I really don’t feel hungry or have awful cravings

~On a good day, I also do the Sweat with Kayla app workout in addition to my walk

Sample High Carb Day

~I eat whatever I want as long as I’m still trending in the right direction with my weight/measurements (notice I say trending because you will never go down in a straight line!)

~When I’m stalled out, I stick to only “good” carbs like brown rice, sweet potatoes, and oatmeal (instead of doughnuts for example, which is one of my favorite cheats!)

My Favorite Protein Shake

You’re going to think I’m insane, but I swear this is delicious regardless of your feelings about cottage cheese.

In a blender, mix the following:

~1/2 cup cottage cheese

~1 serving chocolate whey protein (READ THE LABEL – don’t choose a protein with more than 5g of carbs)

~2 packets of Stevia

~2 ounces of water

~1 capful of caramel flavored extract

~5 ice cubes

~if you’re feeling fancy and have room for the carbs that day you can add some peanut butter – delicious!

These boots are pretty much the best purchase you can make for fall!  They are versatile, comfortable and they also make a statement with the incredible lace-up calves.  And did I mention they are less than $50?!?
